Joann’s Banana Bread
Foolproof banana bread from my oldest friend’s mom, Joann. Can be made as muffins or loaves and with any number of bananas you have on hand.
Ingredients (3 Banana)
3 very ripe bananas
1 ½ cups butter softened (if salted, omit salt)
3 cups all-purpose flour
1 ½ cup granulated sugar
1 cup neutral oil
1 cup buttermilk*
3 large eggs
1 ½ tsp baking soda
½ tsp salt
1 tsp vanilla extract
1 ½ tsp almond extract
1 cup mix-ins optional (mini chocolate chips, nuts, caramel chips, dried fruit)
Instructions
Preheat oven to 350° and prepare baking dish of choice by greasing lightly
Mash bananas thoroughly and set aside
Cream butter 1-2 minutes
Add all other ingredients except mix-ins and mix until just combined, stir in mix-ins if using
Fill prepared loaf or muffin pans 2/3 full
Bake 20-22 minutes until browned and toothpick comes out clean
Let cool in pan(s) about 10 minutes before removing to cool completely on wire rack
Roll out thick on floured surface and cut out shapes
Bake on parchment lined baking sheets 5-8 minutes until edges are firm
Notes
Banana Count Native to 3 bananas but easily converts to any number of bananas because of the 1:1 banana to egg count! See conversions below
Buttermilk Buttermilk powder works great instead of true buttermilk, follow instructions on package for substitution
Mixing Can be done with stand mixer but also by hand or in a plastic bag in a pinch, just make sure to smoosh the butter up enough that it gets mixed in throughout the batter
Time Bake time may vary based on pans used, mini muffins will take about 16 min and loaves may take longer
Freezing freezes very well in individual muffins or slices, wrap tightly with plastic wrap to freeze, microwave 15-20 seconds to reanimate
